Bok Choy Stir Fry with Mahi Mahi


Prior to grocery shopping, I try to think of a couple of recipes that I want to make in prep for the week ahead. Sometimes I peruse different websites like Detoxinista or Linda Wagner for inspiration and other times I go by what I am craving or what really sounds satisfying. As I was reading a newsletter by Dr. Mark Hyman in my email, I had the  opportunity to download some of his recipes from his new cookbook, The 10-Day Detox Diet Cookbook. The stir-fry recipe below was inspired by one of the recipes in the cookbook. Not only was the recipe delicious, it inspired me to try bok choy, which I had never used before.

Bok Choy Stir-Fry with Mahi Mahi

  • 1/2 c. onion chopped (with 2 T. water, 1/2 T. butter optional)
  • 2-3 garlic cloves, minced
  • 2 1/4 c. yellow squash, chopped
  • 1 t. Adobo seasoning
  • 1/2-1 c. chopped bok choy, stems
  • 4 c. chopped bok choy leaves
  • 1 c. chopped red & orange bell peppers
  • 1 T. coconut aminos
  • avocado slices (for the end)
  • Mahi Mahi filets, about 2, 6-8 oz. filets (I got ours from Whole Foods)
  • butter, melted
  • herbamare, sprinkle

Add the onion, water, butter, and minced garlic to a skillet and sauté on medium heat until tender, about 5-7 minutes. Add the chopped squash to the onion & garlic mixture and stir consistently for about 5 minutes or so, making sure that it does’ burn. Add the Adobo seasoning along with the bok choy leaves & stems, bell pepper and coconut aminos. Sauté until well combined and the vegetables are softened to desired texture.For the fish, coat the fish in melted butter (maybe 1/2 T. or so, I used Kerrygold ) and sprinkle with herbamare,  then place on skillet cooking on medium heat for about 3-4 minutes on each side or until lightly golden brown and cooked all the way through. Serve with stir-fry and top with avocado slices.Screen Shot 2015-02-28 at 1.31.10 PM
