Cashew Chocolate Chips Bites

This is one of my new favorite snacks…or treats…they work for either! I took them hiking a few days ago and they stayed nice and chilled in the cooler. Naturally sweetened with dates and mixed with raw cashews, these are a perfectly satisfying anytime snack or treat.


Cashew Chocolate Chips Bites

1 c. raw cashews
5 dates, soaked in 1/4 c. hot water
1/2 t. vanilla
pinch of sea salt
1 t. water, or as needed
1/2 T. chocolate chips or sub cacao nibs (I used Enjoy Life)
Place dates in hot water for about 5 minutes to soften. Meanwhile, add the cashews to the food process and process into a fine consistency. Remove the dates from the water and add them to the food process along with the vanilla and sea salt. Pulse until a sticky dough forms, adding a teaspoon of water if needed; you should be able to pinch the dough together and it stick. Use a half tablespoon to scoop and place bite-size pieces onto parchment paper. Place in freezer to chill for about 5-10 minutes then serve or place in fridge in airtight container. Makes about 15 balls, deepening on size preference.
