Chewy Oatmeal Raisin Cookies

The weekend just got a little sweeter with this new cookie recipe. I wouldn’t think I would ever speak so highly of a cookie that didn’t have chocolate chips, but that just gives you an idea of how wonderful these are!

One of my main priorities when working with clients is showing them how food that is healthy can also be delicious. I work to teach them about upgraded food choices and what ingredients to substitute for the typical not-so-healthy additive & chemical-filled fare.  For example, awhile back I was seeing a client who was cleaning up her diet to improve fertility. Initially, she was skeptical about this whole eating healthy and loving it – eat healthy and enjoy it…she didn’t think it was possible. However, with cookies like these in the mix, you can imagine her mind quickly changed.

The taste and texture are spot on and you definitely won’t miss the oats!

Grain Free Oatmeal Raisin Cookies (Paleo, Gluten Free)
2 T. coconut oil (softened)
2 T. honey
5 stevia scoops (currently using Organic Sweet Leaf, scoop included)
2 t. vanilla
1/2 t. cinnamon
1 egg
1 c. almond flour
2 c. coconut flakes (1 c. finely shredded, 1 c. large)
1/3 c. raisins (I used large flame raisins which seem chewier)
1/4 t. baking soda
Preheat oven to 350F. Mix coconut oil, honey, stevia, vanilla, cinnamon together in a bowl. Once combined, add the egg to the mixture and combine. Add almond flour, coconut flakes, and raisins and after all ingredients are well combined, add the baking soda, mixing again to make final dough. Drop spoonfuls of dough onto cookie sheet and shape slightly with hands, lightly pressing down for a level cookie – these cookies do to have to be molded to perfect but should fit your preference. Bake for approximately 10 minutes at 350F, checking after about 7 minutes (baking time may vary slightly as I must have turned off the oven and left the cookies in…luckily, the cookies were perfect!).
