Chili Lime Chicken Patties


We’ve been on the sweet train for a little while but with Thanksgiving behind us, I’ve got a new recipe that’s on the savory side. Don’t worry, without thinking of anything related to Christmas, I naturally included some red & green in the picture making it perfect for this stretch of time before the big holiday.


Chili Lime Chicken Patties (inspire by this recipe)

1 1/4 pounds of chicken breast
2-3 T. lime juice
1-2 garlic cloves, minced
3 T. chopped sweet onion
1/4 c. cilantro, stems removed
1/4 t. red pepper flakes
1/2 t. sea salt
1/2 t. pepper
1 T. ghee (optional)

Preheat oven to 350F. Prepare vegetables and seasonings as directed above. Chop onions and mince garlic. Chop chicken into 1-2” pieces and add to food processor. Pulse chicken to grind. Add remaining ingredients and pulse quickly to combine. Pour chicken into mixing bowl and continue to stir until ingredients are evenly combined. Form into patties and place on lined baking sheet. Bake for approximately 20 minutes, 10 minutes on each side. Makes about 9 patties, depending on the desired size. Note: *make sure to check that the inside of the patties have cooked all the way through.

As always, I love having prepared foods like these patties on hand to prepare a quick lunch or reheat quickly for dinner. The preparation is super simple as is the cleanup. You can add veggies as a side dish or wrap in romaine lettuce or chard for a delicious wrap. Voila…healthy eating that is simple and delicious!
