Chocolate Chia Sunflower Bites


Happy New Year! I hope you are continuing to enjoy a happy holiday season!

If you’re like me, you likely feel ‘done’ of all the holiday treats and you’re beyond ready to get back on track! After a long holiday of indulging in foods that generally aren’t on your menu, you might find yourself ready to get back on track, but at the same time craving something to hit that sweet spot. Rather than swearing off all sweet snacks, which quickly leads to feelings of deprivation where we tend to ‘mess up’ and eat (A LOT) the foods that we weren’t going to, I recommend looking at upgraded options. If you’re looking for a sweet treat that tastes rich and chocolatey, make the Chocolate Chia Sunflower Bites now…they only take 5 minutes to prepare!


Chocolate Chia Sunflower Bites (gluten free, Paleo friendly)

1 T. sunflower seed butter (I use Once Again)
1 T. brown rice syrup or honey
3 stevia scoops (currently use this brand, scoop included)
1/2 t. vanilla

1/4 c. chia seed

3 T. cacao powder
1 T. coconut or almond milk
2 T. coconut flakes, unsweetened
1 t. cacao nibs

Add sunflower seed butter through vanilla to a small mixing bowl and combine ingredients. Add the chia seeds and mix well to combine. Add the remaining ingredients and stir thoroughly, adjusting flavors and adding more milk as needed to thin mixture if needed. Scoop tablespoon sized scoops onto a plate lined with parchment paper. Place in freezer to chill for about fifteen minutes. Remove and enjoy! Makes about 6-9 bites depending on the size.
