Creamy Chocolate Truffles

I typically wouldn’t start off by sharing that there is problem with a recipe. I can’t help it with this one. There is a problem…a big problem. The recipe creates such delightful chocolate goodness that keeps you coming back for more and before you know, they are gone…all truffles gone.


That’s the problem. Lucky for you, I have a solution. Double, triple, quadruple this recipe…depending on your craving for chocolate or who you plan to share with!

Creamy Chocolate Truffles (gluten free, Paleo friendly)

1 T. almond butter
1 T. raw honey
1 t. vanilla
1/4 c. cacao powder + more to roll
pinch of sea salt

Place almond butter, honey, and vanilla into small bowl and mix; add the cacao powder and sea salt to form a sticky chocolate mixture. Use a half tablespoon to scoop and place bite-size pieces onto parchment paper. Roll pieces in cacao powder or chopped cacao nibs. Place in freezer to chill for about 5-10 minutes then serve or place in fridge in airtight container. Makes about 6 balls, deepening on size preference.

Only 5 total ingredients including salt. Really it does not get any more simple than this. I mean to say that you can prepare a recipe with 5 ingredients and in less than 5 minutes, it’s kind of mind boggling, especially when it’s this good. 🙂
