Decadent Chocolate Brownies


Happy St. Patrick’s Day!

While this recipe is not green in color at first glance, if you look a little deeper (into the recipe) you’ll notice these brownies are made with zucchini. Therefore, you really can enjoy them today in celebration of the ‘green’ holiday! I made a version of these brownies on a previous blog and wanted to try them again. This time I doubled the recipe and changed a few players in the recipe, subbing ghee for coconut oil and adding some walnuts.

This recipe is egg, dairy, and gluten free but loaded with that rich chocolate flavor we love! Read up on the previous recipe and benefits of zucchini here.


Decadent Chocolate Brownies (gluten free, egg free, dairy free)

2 c. zucchini (1 lg. zucchini peeled, chopped )
1/4 c. honey
6-12 stevia scoops (depending on preferred sweetness* scoop included inside stevia)
1/2 T. vanilla
2 T. ghee
1/2 c. cacao powder
½ c. buckwheat flour
1/2 c. almond flour
¼ t. baking soda
1/4 t. baking powder
1/8 t. sea salt
¼ c. dark chocolate chips*
1/8 c. chopped walnuts, optional

Preheat oven to 350F. Peel zucchini and chop, then add to food processor or high speed blender. *I used my VitaMix so the texture might slightly change due to different processing methods. Add honey, ghee vanilla, stevia to the blender and blend all ingredients until smooth. Add dry ingredients, except chocolate chips & walnuts to mixing bowl, then pour wet mixture into bowl and mix well to combine. *You might start with a lower amount of stevia and taste test – you can since there are no eggs! 🙂 Then adjust accordingly, adding more if needed. Different brands of stevia will be sweeter than others. Stir in chocolate chips and nuts. Spread onto silpat or lined brownie pan. Bake at 350F for approximately 13 minutes, checking on them at :10 minutes. Remove from oven and allow time to cool, then cut into brownie squares. Makes approximately 20-24 brownies depending on the size. Drizzle with chocolate sauce below and/or layer with So Delicious Coconut Whip for a truly decadent dessert. Add cacao nibs to top. *Maple syrup may work in place of honey.  *I used a mixture of Lilly’s stevia sweetenend chocolate chips and Enjoy Life chocolate chips.

Chocolate Sauce

¼ c. chocolate chips
1 t. coconut oil

Place ingredients in small glass bowl then heat in convection oven for a few minutes at 350F until mixture is melted, watching so the chocolate doesn’t burn. You may also use the microwave if you wish. Drizzle desired amount on top of brownies.
