Deconstructed Caramel Apple


You might be feeling a little down about the weather this weekend so I wanted to give you something that would sweeten things up.

The other weekend I was craving a caramel-like dip for apple slices. I had to look no further than my stash of medjool dates and my vitamix and I knew I could make this happen!

Dates are rich in a ton of vitamins, minerals and phytonutrients that you can read more about here. They also have fiber to help keep things moving. 🙂

I don’t know that I have ever had a caramel apple, however, this deconstructed version is sure to satisfy your craving with upgraded ingredients that definitely are not found in the store-bought version.


Deconstructed Caramel Apple

1 organic apple of your choice (washed and sliced)
15-20 medjool dates
~1 c. of water (bring to boil first)
vanilla extract or powder
sea salt

Boil about 1 cup of water. You will cover the dates with the water so adjust accordingly. Remove the pits from the dates and add to a small bowl. Cover with hot water. Allow dates to soak in water for 5 or so minutes at least. Next, pour most of water off dates. A small amount of water (a tablespoon) is fine to leave. Pour dates and water into a Vitamix or high-speed blender. Add a dash of vanilla and sea salt. Puree the dates to a smooth texture, using a tamper as needed. You may need to stop and scrape the sides of the container. The more dates you have, the easier it will be to puree the mixture (the fewer the dates, the more they get stuck under the blade). Pour into glass container with airtight lid. Serve with sliced apples immediately (the caramel dip might be slightly warm) or chill in the fridge before serving. Save remaining mixture for more apple slices. I also used it to make a simple granola, using it for the sweetener in place of maple syrup. Delish!

Another option is to chop the apple and layer the apple pieces with the ‘caramel’ and add a dollop of So Delicious Coconut Whip to the top.
