Lentil Quinoa Veggie Burger


One of my favorite, most simple meals is sautéed kale and quinoa, sprinkled with goat cheese, topped with sliced avocado and a sprinkle of Herbamare. To shake things up, I cooked some lentils and have been adding these into the mix. It has been quite tasty and very simple to prepare. While deciding what to prepare this week, I decided to use the lentils and quinoa I had on hand to create a veggie burger.

I love having simple items like veggie burgers on hand. I find that I can easily prepare a delicious salad or create a wrap with romaine or chard leaves that leaves me feeling satisfied and light so that I can tackle to-do’s with energy! Did you know that the work of our digestive system can take up to 70% of our energy at any given time. With that in mind, I like to keep meals as simple as possible and save my energy for play…a run outside, an Xtend barre class, evening walk, or meeting up with friends! 🙂


Lentil Quinoa Veggie Burgers (gluten free)

1.5 c. quinoa, cooked (I used the rainbow variety)
1.5 c. lentils, cooked (I used black lentils)
1 flax egg (1 T. ground flax+3 T. water)
1/4 t. chili flakes
1/2 T. cumin
1 t. Adobo seasoning
1/4 c. shredded goat cheese, smoked (Bella Capra)
1/2 T. ghee (optional)

Preheat oven to 400F. Make the flax egg by combining ground flax (*not the seeds) with water and set aside for 10 or so minutes. Add the cooked quinoa, lentils, and flax egg (once formed) to a food processor along with seasonings and blend, stopping as needed to wipe the sides of the bowl.  Process until a fairly uniform dough is created. Lastly add the goat cheese and ghee and blend, leaving some large shreds of cheese. Using your hands, form mixture into patties and place onto a lined baking sheet. Bake for about 10 minutes on each side. After 10 minutes on each side, I turned off the oven and left the patties inside for another 5 or so minutes, allowing the patties to crisp up a little more. Eat on top of a delicious salad, inside a romaine/chard leaves.
