No Noodle Lasagna + Challenge

What a beautiful weekend! So grateful for the weather and the opportunity to be out enjoying it! WOW!!

Speaking of enjoying…I’ve been enjoying a lot of delicious food lately. I’m doing the Xtend Barre 60 Day Lifestyle Challenge and I’m loving the recipes. I’ve made the Mexican Spiced Brownies and last week I made the No Noodle Lasagna. Delicious! Along with prepping the lasagna last week, I made another warm winter salad but this time used brussels sprouts, butternut squash, sweet potato, and chicken…delicious…stay tuned for the recipe.

You might be wondering why a health coach is doing a lifestyle challenge. While the meals that I prep are very clean and very similar to those in the Lifestyle Manual, for me it is an opportunity to take my game for the next level. You see, I have a sweet tooth and have for quite some time. Again, I prepare only what I deem the healthiest ‘treats’ but even then I feel somewhat addicted to having that sweet after dinner every night. I also found that with the holidays and nibbling here and there a bit more than usual that my sweet cravings increased even more so that I wanted something after lunch. After settling into the New Year and cleaning up my diet a bit more, the lunch cravings decreased overall, but the Xtend Lifestyle Challenge is a great opportunity for me to be part of a community working together to get to the next level of health.

For me, this is tending to that after-dinner craving. As I mentioned last week, one of the best things to do when you notice you’re having those sweet cravings is to examine the time and what you’re doing. At the end of the day, I love curling up with a blanket next to Travis and watching a silly show like The Housewives of Beverly Hills or Top Chef (insert: I am really looking forward to Game of Thrones..who is with me…hehe)! In addition to setting new habits, I’m also doing a 6-Day detox for the liver and GI tract to support detoxification of the liver and really cleansing my system.

Without further ado, following is the recipe for the No Noodle Lasagna with a few modifications.  The only thing I would change for next time is shredding the cabbage in advance.

No Noodle Lasagna

1 pound grass fed bison
1 medium onion
1 garlic clove, minced
1 can of fire roasted tomatoes (Muir Glen)*
2 T. strained tomatoes*
1 c. chopped sweet potatoes* (cooked)
2 t. dried oregano
2 t. dried basil
1 t. Adobo or Herbamare seasoning
1 large cabbage*
4-6 oz. Bella Capra goat cheese, shredded (found at Vitamin Cottage Southglenn)

Directions: Saute onion and garlic until soft, adding a bit of water as needed. Add bison & Adobo seasoning (or Herbamare) and cook until brown, stirring occasionally. Add diced tomatoes, strained tomatoes, sweet potato (peel, chop, lightly cover in coconut oil or butter and bake in oven at 350 for about 35 mins.) and bring to boil then reduce to simmer for about 30 minutes. Preheat oven to 350F. Line baking dish with butter or coconut oil. For the cabbage, remove the largest cabbage leaves keeping them intact. Blanche cabbage in boiling water until softened, removed and place in cold water, then pat dry with towel. Add a layer of meat & sauce to cover the bottom of the dish (1/2 the amount). Cover with a layer of cabbage leaves, then a layer of cheese. Repeat layers and sprinkle cheese over the top. Place in oven and cook for about 30 minutes.

**Changes from the original recipe: I used strained tomatoes in place of pasta sauce because I had a jar opened that I needed to finish using; I added more oregano and basil to sub the pasta sauce flavoring that the original recipe called for. I used bison in place of beef (see benefits of bison here). I also used goat cheese in place of the Parmesan and mozzarella cheese mixture that the original recipe called for. I also used sweet potatoes in place of carrot and did not add mushrooms, which the original recipes calls for. Next time I would definitely shred the cabbage in advance to make it easier to eat.
