My Favorite – Chocolate Chip Cookies

Favorite treat?

Chocolate chips cookies –  hands down.

Soft and chewy.

Lots of chocolate chips.

Slightly frozen or warm from the oven.

Homemade.

Variations?

Chocolate chip cookie ice cream sandwich or…

Crumbled on top of ice cream (non-dairy of course).

Chocolate Chip Cookies (gluten-free)

1 T. ghee
2 eggs
2 t. vanilla
1 T. Stevita stevia
1/4 c. honey or maple syrup*
1/4 t. sea salt
1 c. almond flour
1/4 c. buckwheat flour* (freshly ground)
3 T. coconut flour
1/8 t. baking soda
1/2 c. chocolate chips (more or less depending on preference)

Preheat oven to 350F. Add ghee, eggs, vanilla, stevia, honey or maple syrup to a food processor and lightly pulse to combine ingredients. *The color and texture of the cookie will slightly vary depending on which liquid sweetener, honey or maple syrup, you use. Add sea salt, almond flour, buckwheat flour, and coconut flour and pulse to combine to form dough. Add baking soda and pulse one more time. Remove dough from food processor bowl and place into mixing bowl. Add chocolate chips, stirring well to evenly mix. Drop tablespoon-sized scoops of dough onto a lined cookie sheet. With slightly moistened hands, rounds edges and slightly flatten dough to form cookies. Bake at 35oF for approximately 8 minutes. Makes approximately 12-15 cookies, depending on the size of cookies you choose to form.

Remove from the oven, allow time to cool and then serve OR…after allowing time to cool, place in freezer. Freeze until slightly frozen and serve. Before enjoying take 5-10 deep breaths taking in the beauty and simplicity of such magnificence. Enjoy with all your being. Be satisfied.
