Paleo Wraps – My Favorite New Recipe


I love my fresh summer salads but just like anyone I can get bored with eating the same thing again & again. I recently was listening to a webinar recording from Julie Daniluk from Meals that Heal Inflammation – I love listening to anything health related whether I’m out for a workout on the river or cleaning the kitchen. Julie was talking about upgraded food choices when she mentioned Paleo Wraps…hmm, sounded great but since I hadn’t seen them on my usual grocery store run, I didn’t think too much about them. However, later that day I was out grocery shopping when I noticed nothing other than Paleo Wraps…ahhh…it was a sign…I had to try them.


I was hooked the first time I tried them. One of my favorite ways to enjoy them is with the honey mustard chicken & kale mixture below. However, I’ve layered chopped greens, scallions, avocado, and sliced turkey with a sprinkle of herbamare for a super quick & delicious lunch! In need of a healthy treat, I spread sun butter with a little honey. I’ve thoroughly enjoyed them every time!


Honey Mustard Chicken Wraps (Paleo, Gluten Free)

1/4 purple onion, chopped
3 T. water
2 T. coconut aminos *(plus 1T more with kale mixture if needed)
1 t. ghee (optional)
1/4 t. herbamare

4 c. chopped kale
1/4 t. herbamare
2.5-3 T. honey mustard (or more depending on flavor preference)
1 c. chicken, *cooked & chopped
goat cheese feta (optional)
Saute onion with first set of ingredients, adding water as needed so the onions don’t burn. Once onions have softened, add chopped kale, herbamare, and honey mustard, adding more coconut aminos if needed. Once the kale has softened and is wilted add the chopped chicken and stir mixture to combine well. Remove from heat. Add desired mixture to a Paleo wrap and top with scallions and goat cheese feta (optional). Wrap in a burrito or taco fashion depending on your preference. Serve & enjoy. Makes approximately 2-3 wraps depending on preferred size. I like adding additional fresh greens to the top of the chicken & kale mixture to get an additional dose of healthy greens. 🙂
*Applegate Farms Chicken Breast Strips work in a pinch, otherwise, you can chop thawed chicken and cook on the stovetop, stirring until done. Add your favorite seasoning – herbamare is a versatile seasoning and you can also use the coconut aminos as needed for the chicken.
