Pecan Pie Bars with Chocolate Drizzle

In the nutrition world, we say the shorter the ingredient list, the better. It’s hard to believe that these deliciously rich bars have only six ingredients.


I attended a couple of holiday parties this past weekend and for one I was in charge of bringing a dessert. Since Saturday was a busy day, I only had about thirty minutes to throw something together before it was time to get ready and this is what came to mind.

Pecan Pie Bars with Chocolate Drizzle (*gluten-free, vegan)

1 ¼ c. pecans (or a mix of other nuts)
4 dates + ¼ c. hot water
couple dashes of sea salt
¼ t. vanilla
¼ t. Stevita (or sub stevia to taste)

Chocolate Drizzle 

2-3 T. dark chocolate chunks
½ t. coconut oil (optional)

Soak dates in hot water for at at least 5 minutes. Add pecans, sea salt, and Stevita to a food processor and process into fine pieces; *save a tablespoon or two of chopped nuts for topping. Once dates are softened, remove from hot water and add to food process along with vanilla. Process until a dough like mixture has formed. Remove dough and form into large rectangular bar.

Add chocolate chunks to small oven-safe bowl and place in oven to melt at 350F, stirring every few minutes until melted. Remove chocolate and drizzle chocolate with spoon. Sprinkle pecan pieces over top. Place in freezer for about fifteen minutes and serve.
