Perfect Fall Breakfast – Apple…

Apples? Cinnamon? Warm breakfast on a chilly morning?

Yes, I think you’ll like this next recipe. It’s perfect not only for a chilly morning but the quinoa is a great plant-based protein option for breakfast. Starting your day with a nutrient dense protein source is said to increase energy, decrease cravings and support weight loss.

Apple Cinnamon Quinoa

1.5 c. quinoa (cooked)
1 t. vanilla
1 t. ghee (optional)
dash of sea salt
1 t. cinnamon
1/4 t. pumpkin pie spice (optional)
2 stevia scoops (or to taste)
1-2 T. chopped walnuts
drizzle of honey

1 baked cinnamon apple, chopped

Preheat oven to 350F. Chop apple and sprinkle with cinnamon and a dash of sea salt. You can also add a drizzle of honey for a sweeter version. Bake at 350F for approximately 20 minutes, stirring mid-way, or to desired texture – for more of a crunch, decrease the baking time.

Place cooked quinoa in a small pot and add vanilla, ghee, sea salt, spices, stevia and stir well to combine all ingredients. Pour serving size into cup or bowl and add chopped walnuts and a drizzle of honey. Makes approximately 2 servings.
