Pumpkin Pecan Bars

I made these bars awhile back and since then they have become a regular favorite. I love having them on hand for a quick snack or even a treat in the evenings. They can serve as a great alternative if you are craving bread too.

Gluten free and sweetened with honey, these bars are light and satisfying!


Pumpkin Pecan Bars (Gluten Free, Dairy Free)

1/2 c. pumpkin puree
1/4 c. + 2 T. honey
1 egg
1/2 T. vanilla extract
2 t. pumpkin pie spice
1/2 c. coconut flour
1/3-1/2 c. mini chocolate chips (I used Enjoy Life)
1/4 c. chopped pecans
1/4 t. baking soda
1/4 t. salt
Preheat oven to 350F. Add the pumpkin, honey, egg, vanilla to a food processor. Pulse a couple times to mix the ingredients. Add the pumpkin pie spice, coconut flour, baking soda and salt and pulse again until well combined. Lastly, add the chopped pecans and chocolate chips, pulsing just a couple times to mix everything one last time. Line a baking sheet with parchment paper and spread mixture into a large square (to your desired thickness). Bake at 350F for 20-25 minutes.
Voila…a super simple, yet healthy and delicious snack or treat!
