Raw Chocolate Anyone?

Love chocolate? Find yourself craving a little sweet after dinner? Love healthy, simple recipes that can be made in no time? {Yes, yes, and yes!} Then, you’ll love this next recipe.

This chocolate treat primarily consists of coconut oil, honey, and cacao powder. Holy SUPERFoods! Coconut oil is a healthy fat source made of medium chain fatty acids which digests more easily and can be used more readily for energy. In addition, coconut is great for fighting inflammation and boosting immune system function. Go ahead, have another piece of chocolate…this kind anyway! Honey from a local source may help alleviate allergies and honey also is great for fighting bacteria and delivering a host of vitamins and minerals…but, even though it’s a healthy source of sugar…it’s still a sugar and should be used/consumed in balance. Finally, cacao powder has antioxidants that fight free radicals or inflammation in the body.

Raw Chocolate 

2 T. coconut oil, slightly softened
1 T. honey
dash of sea salt
1/4 t. vanilla
2 T. cacao powder
cacao nibs (optional)

Add coconut oil, honey, sea salt and vanilla to a small bowl and mix to form a honey paste. Next add cacao powder, stirring again until chocolate paste is formed. Once there are no clumps of coconut oil, using a small spoon, scoop chocolate into silicone molds. Smooth out chocolate as needed with your finger or spoon. Place in freezer to chill for about 15 minutes. Serve and enjoy! Makes approximately 9 small chocolate pieces depending on preferred size/thickness. {Coconut oil melts at room temperature so make sure to place these in the freezer(for a harder chocolate treat)/fridge (for a softer chocolate treat) if you’re not planning to eat or serve them right away…I don’t think they’ll last too long!}
