Sun Dried Tomato Hummus


A craving for raw veggies and hummus hit last week. Luckily, I had some cooked lentils prepared and I was ready to develop a quick recipe using the ingredients I had on hand. While my favorite hummus is made with zucchini, this fulfilled my craving and it was also a great way to use the rest of the lentils. The base of this recipe is lentils with a mix of tahini. If you’re not familiar with tahini, it is a paste made from ground sesame seeds. If you’re following strict food combining principles, you might want to try this hummus, a recipe I create awhile back. While this recipe combines a starch (lentils) and seeds (tahini), it didn’t cause any digestive upsets. With that being said, everyone’s system is unique (bioindividuality) and I’d recommend having the lentil hummus in between meals or combined with a salad. I soaked the lentils for several hours prior to cooking which also improves their digestibility.


Sun Dried Tomato Hummus (with lentils)

1/2 c. lentils, cooked (I used French Green Lentils)*
1 garlic clove
1/2 T. fresh lemon juice (or more to taste)
2 T. tahini
1/4 t. Herbamare
4 sun dried tomatoes (I used 365 Organic)
~5 T. water, or more depending on preferred thickness

Add all ingredients to a high speed blender like the Vitamix and blend until smooth, using the tamper and scraping the sides as needed. Remove from blender and place in an airtight container, refrigerating to chill prior to serving. You may need to use more water, depending on how thick you prefer the texture. *To cook the lentils, I soaked them for several hours, pouring boiling water over them to start. Afterwards, I drained and rinsed them well. To cook, after adding them to a medium-size pot, I covered them water and add about a 1/4 t. of sea salt. I cooked quite a large amount as I was making homemade enchiladas as well where I was also using lentils.
