Sunflower Butter Cups

You might be tempted with all the Valentine’s Day candy around to sneak a few pieces. Beware though…traditional store-bought chocolates and candies are filled with sugar and preservatives that rob you of your energy and vitality and make you crave more junk food!

Don’t worry, I’ve got just the perfect solution for you! If you’re looking for something sweet, rich, and chocolate-y you must make these straight away! They are so rich that just one should do the trick. Even better, they will leave you feeling satisfied, light, and energetic!

Sunflower Butter Cups (GF, DF)

Base:

2 T. sunflower seed butter
1/2 T. coconut oil, melted
1 T. honey (or sub maple syrup)
1 stevia scoop (optional)
1/4 t. vanilla
pinch of sea salt

Melt coconut oil. Add remaining ingredients to a small bowl and add coconut oil once it has melted. Stir to combine. Scoop and spread mixture into the bottom of cupcake liners (mini ones would be fun too!) and set aside. I recommend not making the layers too thick as these are very rich so a little goes a long way.

Chocolate Topping:

1 T. coconut oil, melted
2 T. cacao powder
1/4 t. vanilla
1 T. honey (or sub maple syrup)
pinch of sea salt

After melting coconut oil, place all ingredients into a small mixing bowl and combine well. Evenly drizzle a layer of chocolate on top of the sunflower mixture. Set filled liners on a plate or small pan and place in the freezer for at least 20+ minutes to set. Remove and enjoy. *Note, these will melt if left out of the freezer so make sure to replace them in the freezer…if they stick around that long! 🙂

If you have chocolate remaining, pour it into the base of the cupcake liners and freeze for a delicious chocolate disc…sprinkle a few cacao nibs on top or mix in some coconut or chopped nuts for an extra boost of delicious fun!
