Zucchini Pesto & Meal Prep Tip

One of my favorite tricks for making really delicious, healthy, simple meals is making dressings, sauces, or a hummus ahead of time along with a few staples like quinoa and chicken. When you do the prep work ahead of time, it makes it so easy to throw together a super fast meal that is nutrient dense and tasty!

We have a baby zucchini growing in our garden but I couldn’t surpass creating fun recipes with this very versatile veggie so I’ve been gathering them elsewhere. Recently I’ve been getting zucchini at the local farmer’s markets and in a pinch at Whole Foods.

This pesto recipe is packed full of vitamins & minerals along with healthy Omega 3’s so enjoy it with some raw veggies like carrots or celery, add to salads in place of dressing, or spread it on your wrap – options endless! Pictured here is some sautéed kale with chicken, as well as some smoked goat cheese and some raw veggies with the pesto. Yum!

Zucchini Pesto

1 c. zucchini (peeled, chopped)
3 garlic cloves
1/2 c. walnuts
2 T. lemon juice
2 c. spinach (lightly packed)
1/4 c. water
1/4 t. heramare
3 T. nutritional yeast

Peel and chop zucchini. Place all ingredients into a high-speed blender like the Vitamix and blend until smooth. Remove and place in an airtight container in the fridge to chill.
